Instructions
  1. In a small bowl add pb2 and slowly mix 1 tablespoon of water at a time until you have a thick peanut butter like consistency.
  2. In a separate bowl mix alll dry ingredients together.
  3. Add pb2 mixture and remaining ingredients except chocolate chips.
  4. Use a fork to mix and mash until dough forms.
  5. Fill a cookie scoop half way with the dough and then add 2-3 chocolate chips into the center.
  6. Fill the rest of the way with dough and drop on cookie sheet lined with parchment paper.
  7. Bake at 375f for 7-8 minutes or until golden brown.

Instructions
  1. In a blender combine oats, protein, cottage cheese, egg whites, and baking powder. Blend until smooth.
  2. Spray pan with cooking spray and cook pancake mixture over medium heat.
  3. Make chocolate sauce by combining cocoa powder, sweetener to taste, and just enough water to drizzle.
  4. Make peanut butter sauce by mixing pb2 with enough water to drizzle.
  5. When pancakes are done top with sauces and 2 crumbled mini Reese's cups.
  6. Enjoy!

Instructions
  1. Preheat oven to 375F and grind oatmeal to make a flour.
  2. Mix flours, Pb2, bakings soda, and salt in a bowl.
  3. Mix butter, Truvia, and vanilla in another bowl.
  4. Add eggs to butter/Truvia/vanilla and mix again.
  5. Slowly beat in flour mixture and then add chocolate and peanut butter chips.
  6. Bake on an ungreased cookie sheet for 12 minutes.
Recipe Notes

For Truvia, use half regular baking blend, and half brown sugar Truvia.

  1. Add all ingredients to a food processor and blend very well until your mixture starts to clump together.
  2. If using powdered peanut butter, add water to powder first to make peanut butter then add to food processor.
  3. Remove mixture from food processor (mixture will be sticky) and press into a small container (I used a 7x 5 x 1.5 inch glass container).
  4. Melt chocolate and pour on top of your mixture.
  5. Set in freezer until chocolate hardens.
  6. Cut into bars and enjoy.

  1. Deep dish carrot cake cheesecake bars - makes 6
  2. 2 cups oats
  3. 3 scoops vanilla protein powder (I used lean body for her protein)
  4. 3/4 cup peanut butter (I used peanut protein and it worked well)
  5. 1/4 cup chia seeds
  6. 2 large carrots, shredded (or about 1/2 cup)
  7. pinch each cinnamon, nutmeg, ginger
  8. 1/4 cup liquid sweetener
  9. 1/2 cup white chocolate, melted (I used Amber lyn chocolates)
  10. 1/2 cup SO Delicious dairy free cultured coconut milk in unsweetened vanilla
Recipe Notes

This pancake recipe has been my "go to" recipe for the past couple weeks and it has received rave reviews from others who have made it. these pancakes are super thick and fluffy, satisfying, and of course, delicious! and they still taste amazing the next day. double the recipe and store the leftovers so you have breakfast ready to go for the next day!
Instructions
  1. Combine all dry ingredients and mix well then add in wet ingredients. Mix well.
  2. If batter is too thick you can add a little more water.
  3. Measure out 1/4 cup batter and cook on a skillet.
  4. Cover with a lid to help distribute the heat more evenly.
  5. Repeat with rest of batter and enjoy. leftovers can be stored for up to a week!

  1. Directions for Donuts: Preheat oven to 325 degrees F
  2. Grease donut pan with coconut oil spray
  3. Melt coconut oil in microwave for 30 seconds
  4. Mix together donut ingredients (oat flour, egg, egg white, chocolate protein powder, fat-free greek yogurt, almond milk, coconut oil, vanilla extract, baking powder, baking soda, Truvia)
  5. Pour batter into pan
  6. Cook for ten minutes
  7. Repeat above steps to make 6 more donuts
Directions for frosting:
  1. Mix together frosting ingredients (6 tbsp. Tru-Nut/Pb2, 3 tbsp. almond milk, 40g vanilla protein, Truvia)
  2. Let cool in the fridge while donuts bake
  3. Once donuts cool flip donuts upside down and coat with frosting
  4. Top donuts with sprinkes, chocolate chips, mini peanut butter cups..etc.

Instructions
  1. Coat chicken (I used wegmans boneless, skinless chicken TENDERS (so 3 oz was 3 tenders) in a little sea salt, cloves, and cinnamon. Cut down the center of each tender creating a little pocket.
  2. Place chicken in a pan and cook. Flipping occasionally. Make sure your "pocket" isn't sealing shut.
  3. Mix together cottage cheese, pb2, a little cinnamon, and enough water to get the right consistency.
  4. Once you flip the chicken for the last time, stuff with pb mixture so it starts to melt. Also place sliced strawberries in the pan so they warm up and make the chicken a little strawberry-ie 🙂
