Vegan Blueberry Pie Donuts
What do you get when you combine your love for blueberry pie with donuts? these mini blueberry pie donuts! I used my 5 minute donut recipe for the crust so they are fluffy-ish like a donut but filled with a blueberry pie filling like a blueberry pie. the recipe is not only vegan but also has the option to be made #glutenfree. and the best part? these took me only about 10 minutes to make!

Instructions
Crust
  1. 3/4 cup whole wheat flour (to make gf try a combo of 3/4 cup oat flour +1-2 coconut flour)
  2. 3/4 cup pumpkin pure
  3. 1 tsp baking powder
  4. 1 tbsp olive oil
Filling
  1. 1/2 cup blueberries
  2. 1 tsp coconut sugar
  3. 1/2 tsp xantham gum mixed with ~1 tbsp water until a gel forms (or you can sub cornstarch or arrowroot if you don't have xantham gum)
  4. 1/4 cup water
  5. 1/8 cup fresh blueberries
  6. In a small sauce pan combine all filling ingredients and stir continually until mixture starts to boil.
  7. Continue stirring until mixture thickens (about 5-8 min).
  8. Stir in fresh blueberries then Remove from heat and let cool while you prepare the crust.
  9. In a medium bowl combine all crust ingredients and mix well.
  10. Use hands to fully incorporate all ingredients until a dough forms.
  11. Get out 3 small silicone cups and press pieces of the dough into the bottom.
  12. Form a small pie crust shape in each silicone cup.
  13. Make sure to save some dough for the lattice topping.
  14. Spoon a spoonful of the blueberry pie filling into each crust.
  15. I had about 2 tbsp leftover.
  16. With the leftover dough roll out 9 thin ropes and drape on the tops of each mini pie.
  17. Microwave the pies for 2 minutes then let cool before enjoying.

  1. 1 medium frozen banana (or 1.5 smaller ones)
  2. 1/4 filtered water
  3. 1 tablespoon raw unsweetened cacao
  4. 1 tablespoon chocolate whey
  5. 1/4 teaspoon xanthan gum
Recipe Notes

Can probably omit but it really does thicken up the 'ice cream'well!!! I get it on iherb.com (SIS866 gives you a discount on your first order!) Continuously pulse your food processor until combined Serves 1.I added unsweetened coconut chips on top of mine. Enjoy!

Instructions
  1. 3/4 c egg whites
  2. 1/3 c water
  3. stevia to taste
  4. 1/2 tsp vanilla extract (or other flavoring to taste)
  5. Combine everything in a blender and whirl away!
High Fiber, High Protein Pancakes
  1. 1/2 cup cauliflower, zucchini, summer squash, or eggplant (if you're feeling adventurous!) fresh or frozen
  2. 1/2 tsp xanthan gum (this helps hold the pancakes together is also great in smoothies)
  3. 2 tbsp flour of choice (I have had success with oat flour, extra xanthan gum, coconut flour, and oat fiber, or subbing 1 tbsp psyllium instead)
  4. 1 tsp baking powder
  5. Add your veggies, xanthan gum, baking powder, and flour and lightly blend until the veggies are finely chopped, but not completely pureed.
  6. Pour your batter onto a greased griddle on high heat and wait about 4-5 minutes or until edges appear to firm up.
  7. Flip and cook on the other side for about 3 minutes. Top with nut butter, syrup, or fruit and dig in!
