Instructions
  1. Put cauliflower into food processor, blender, or grate until cauliflower turns into "rice-like" pieces.
  2. I used the Ninja blender (I love my Ninja...I use it for everything).
  3. Put "rice like" cauliflower on skillet over medium heat and add 1 TBS Tamari Sauce.
  4. Stir in onions, carrots, and green onions, broccoli, and bean sprouts.
  5. Cover pan and cook for approximately 10 or so minutes.
  6. In 2 other separate pans, cook your chicken and shrimp (you could also do this before hand too)
  7. Last, but not least, cook your 1/8 cup of egg whites and 1/8 cup of eggbeaters (or 1 egg).
  8. Make sure to chop up the eggs into pieces with a flipper.
  9. Once chicken, shrimp, and eggs are thoroughly cooked, add all ingredients and mix together.
  10. Serve in bowl with some chopsticks and ta-da!

I must admit I’m getting a bit sick of sweet breakfasts. When i think of savory, there’s omelettes and of course toast with veggies but I still wanted a muffin that I’d be able to take with me to class. Probably one of my favorite muffins is a hearty morning glory filled with everything I love!

Instructions
  1. Whip egg first until frothy.
  2. Add in shredded veggies of choice (make sure to get as much liquid out as possible ).
  3. Mix in dry ingredients and then Apple pieces.
  4. Slowly add in water making use not to add too much or your batter will be too runny.
  5. Top with walnuts.
  6. Bake for 20 mins at 190 degrees.
  7. Makes 10 mini muffins or you could use larger muffin tins for less!

These Black Bean Burgers will win over meat lovers and vegetarians alike. A great source of protein and fibre. One of my meal prep go-to's... I like to make two batches and freeze half by wrapping in tin foil and placing in a large zip lock bag.

  1. 2 cups black beans
  2. 1 cup oats
  3. 1 cup carrots
  4. small onion
  5. 2 cloves garlic
  6. 1/4 cup cabbage
  7. 1 tomato
  8. spices (s&p, cayenne, smoked paprika)
  9. Blend in food processor
  10. form into patties and cook in med skillet at medium heat 5 min. on each side.
  11. 💚 Top with roasted red pepper, lettuce or avocado in a whole grain thin bun.
