Instructions
  1. 5 minute pizza pinwheels (can be made gluten free)
  2. Makes 5-6 pinwheels Ingredients
  3. Crust
  4. 3/4 cup whole wheat flour
  5. 1/2 cup pumpkin puree (or baked sweet potato)
  6. 1 tsp baking powder
  7. pinch each of smoked black pepper and garlic powder
  8. 1 tbsp olive oil
  9. Toppings
  10. 1/4 cup shredded cheese of choice
  11. 1/3 cup mixed bell peppers
  12. Extra toppings, as desired Dipping sauce
  13. 1/2 cup marinara sauce
  14. Combine first 5 ingredients and mix well until a Dough forms.
  15. Sprinkle some flour on the counter and press out the dough into a rectangular shape as big and as long as you can get it without the dough stretching too thin.
  16. Top the dough with peppers, cheese, and any other desired toppings. Be sure to leave a little room at the edges so the fillings don't seep out. Starting at one edge of the rectangle, roll up the dough, making sure to push the fillings in as you roll (similar to a cinnamon roll).
  17. Cut off pieces of the rolled up dough and Arrange on a large plate and microwave 2-3 minutes until pinwheels are fully cooked. Dip in marinara and enjoy!
Recipe Notes

For a gluten free option, can sub oat flour and 1 tbsp coconut flour.

I recently discovered the awesomeness that is a puffle (a pastry filled with whatever you desire then cooked in a waffle maker). so here is my version made with my vegan 5 minute dough then filled with peanut butter and chocolate and layered with strawberries after cooking. delicious.

Instructions
  1. PB&J inspired puffle (can be made vegan) Makes 1 large serving
  2. Waffle- 1/2 cup pumpkin purée (or baked sweet potato or for a fluffier end product, add 1 egg and reduce pumpkin to 1/4 cup) - 3/4 cup whole wheat flour - 1 tsp baking powder - 1 tsp vanilla - 1 tbsp olive oil - 1 tsp sweetener of choice
  3. Filling - couple squares/tbsp chocolate of choice - 2-3 tbsp peanut butter of choice, melted - 1/3 cup strawberries
  4. Combine all ingredients and mix well by hand until a dough forms. Heat up your waffle maker.
  5. Measure your waffle maker then flatten dough into a circular shape that will fit into the waffle maker. Spoon ~2 tbsp peanut butter on one side of the dough and place chocolate pieces on top.
  6. Fold the other half of the dough on top of the fillings and pinch edges together. Place in waffle maker and cook for a few minutes. Pick up the puffle and gently press the seams onto the waffle maker so they cook as well.
  7. Place puffle on a plate and microwave for ~1 minute to ensure dough is completely cooked. Cut in half and layer with strawberries and remaining peanut butter. Enjoy!

Instructions
  1. 5 minute Quest Samoas inspired donuts - makes ~4-5 donuts
  2. 3/4 cup whole wheat flour minus 1 tbsp
  3. 1/2 cup pumpkin purée
  4. 1 tsp sweetener of choice
  5. 1 tbsp olive oil
  6. 1 tsp vanilla extract
  7. 1 tbsp baking cocoa
  8. 1/3 cup date caramel (softened dates + water)
  9. 1/4 cup coconut chips
  10. 1/4 cup almonds
  11. 1 scoop quest vanilla protein powder
  12. Combine ingredients to make donuts ad mix well until a dough forms.
  13. Pull of a piece of dough and form into a long rope.
  14. Form into a donut shape.
  15. Repeat with the rest of the dough.
  16. Microwave 2-3 minutes until fully cooked.
  17. Set aside to let cool. Process almonds in a food processor for about a minute. Mix almonds with coconut, protein powder, and date caramel.
  18. Spread mixture on top of donuts and enjoy.

Instructions
  1. Combine all dry ingredients and mix well then add in wet ingredients. Mix well.
  2. If batter is too thick you can add a little more water.
  3. Measure out 1/4 cup batter and cook on a skillet.
  4. Cover with a lid to help distribute the heat more evenly.
  5. Repeat with rest of batter and enjoy. leftovers can be stored for up to a week!

cinnamon rolls
  1. 1/2 cup pumpkin purée (or baked sweet potato) 3/4 cup whole wheat flour 1 tsp baking powder 1 tsp vanilla 1 tbsp olive oil 1 tsp cinnamon
Apple filling
  1. 1 Apple, cut into apple slices
  2. bowl of water
Directions
  1. In a medium sized bowl combine ingredients to make the cinnamon rolls.
  2. Use your hands to fully combine all the ingredients and form a dough.
  3. Roll out dough into a small rectangle as thin as you can get it. Set aside. Cut the apple into thin slices.
  4. Place in a bowl of water (make sure the apple slices are completely covered with water) then microwave 3-4 min until Apple is soft, pliable, Nd translucent. Set aside to let cool.
  5. Cut off a thin strip of dough then line up a few Apple slices (about 6) on the strip.
  6. Lay the apple slices partly on top of one another so they are overlapping.
  7. Try to Place the apple slices close to the edge of the strip so the rose is more evident once you roll up the cinnamon roll.
  8. Starting from one edge of the strip, carefully roll up the dough like a cinnamon roll. Place on a large plate.
  9. Place on a large plate.
  10. Once finished microwave cinnamon rolls for 2-3 minutes until fully cooked. Then enjoy!

Instructions
  1. Cut off the ends of the eggplant; then cut it into 3/4 inch thick slices
  2. Put the eggplant pieces on a double layer of paper towels and sprinkle both sides generously with salt.
  3. Let the eggplant sit with the salt on it for about 30 minutes to draw out the liquid.
  4. Preheat the oven to 375F/190C
  5. Make the sauce by heating 2 teaspoons olive oil and sauteing the chopped garlic just until it becomes fragrant not brown.
  6. Add the diced tomatoes, dried Italian seasoning, and dried oregano
  7. Simmer sauce on low until it’s thickened
  8. After 30 minutes, wipe the eggplant dry with paper towels
  9. Spray a roasting sheet with non-stick spray, lay eggplant slices on, brush the tops of the eggplant with the olive oil, and sprinkle with dried Italian seasoning.
  10. Roast the eggplant about 25 minutes in the oven once preheated
  11. While the eggplant roasts, slice the fresh basil leaves, plum tomatoes and combine the grated Parmesan and shredded mozzarella.
  12. After 25 minutes remove eggplant from the oven and turn oven setting to broil.
  13. Spread a few tablespoons of sauce on the top of each eggplant slice, sprinkle with basil, fresh tomatoes and top with a generous amount of cheese.
  14. Put pizzas under the broiler for 6 minutes until the cheese is melted and slightly browned.
  15. Enjoy right out of the oven

  2. Pop one or more in as a side dish while you make the rest of your meal 😉 after baking, carefully peel and slice!
  3. The skin comes off easily when its fully cooked.

5 minute chocolate eclair donuts - makes 2
  1. Donuts
  2. 3/4 cup whole wheat flour
  3. 1/2 cup pumpkin pure or vegan yogurt (I used unsweetened cultured coconut milk)
  4. 1 tsp double acting baking powder
  5. 1 tbsp Olive oil
  6. 1 tsp Apple cider vinegar
Filling
  1. 1 scoop @pescience Snickerdoodle protein
  2. 1/2 cup cultured coconut milk (or plain greek yogurt)
Topping
  1. Nikkis coconut butter in chocolate fudge flavor (or melted chocolate or baking cocoa + coconut oil)
  2. 1 tbsp melted white chocolate
Recipe Notes

Combine ingredients to make donuts. Use your hands to fully incorporate the ingredients and mix well until a dough forms. Form into 2 long eclair shapes and microwave 2 minutes. Cut in half and let cool. Dip tips of éclairs in the coconut butter (or melted chocolate). Drizzle white chocolate on top. Combine ingredients to make filling then spoon onto bottom halves of the éclairs. Replace the chocolate topped half on top of the filling and enjoy!
