If you love pie and you love mugcakes, then you'll love this recipe. this is my "go to" recipe for a single serve berry filled pie "mugcake". This mini pie takes only about 5 minutes to make so it's perfect for satisfying that pie craving in a pinch!

Instructions
  1. Single serve (vegan) berry pie mugcake 1/3 cup whole wheat flour 1 tbsp coconut flour 1 tsp vanilla extract 1 banana, mashed 1 tsp baking powder 1/2 cup raspberries (or berries of choice)
  2. Combine all ingredients except berries and mix well.
  3. Add enough flour so that the mixture is easily manageable I.e not sticky.
  4. Press 2/3rds of the mixture into a small ramekin.
  5. Form into a pie crust shape.
  6. Add your berries (if using frozen, be sure to thaw first).
  7. Roll out the rest of your crust and place on top of the berries.
  8. Cut an "x" in the center then,using a fork, press the top crust into the bottom crust.
  9. Microwave ~2-3 minutes or until crust is fully cooked.
  10. Pro tip: put a plate underneath your bowl while cooking to catch the juice from the berries in case it starts to overflow.
  11. Let cool before enjoying!

Instructions
  1. 1/3 apple, chopped
  2. 1/2t vanilla extract
  3. 1/2t cinnamon
  4. 1t sugar free syrup
  5. 2T cottage cheese
  6. 1T almond flour
  7. 1.5T whole wheat flour
  8. 1.5T vanilla whey
  9. 40g egg whites
  10. 1/4t baking powder
  11. Microwave apple chunks with vanilla, syrup and cinnamon for ~ 1 minute.
  12. Add the cottage cheese flours and protein powder and stir, then add egg whites and baking powder and stir again.
  13. Cook on a lightly greased pan until bubbles form, then flip and cook other side.
  14. Top with favourite pancake toppings and enjoy!

Instructions
  1. Chocolate mint glazed donuts
  2. Makes ~4-5 donuts
  3. Donuts 1/4 cup baked pumpkin purée (or baked sweet potato)
  4. 3/4 cup whole wheat flour minus 1 tbsp
  5. 1 tsp baking powder
  6. 1 tsp vanilla
  7. 1 tbsp olive oil
  8. 3 oz muscle egg chocolate mint brownie egg whites (can sub 1 egg or 1/4 cup pumpkin puree)
  9. 1 tsp liquid sweetener of choice
  10. Glaze 1 tsp muscle egg chocolate mint brownie egg whites
  11. 1/4 cup baking cocoa
  12. water
  13. Combine all dry ingredients then mix in wet.
  14. Mix well until a dough forms.
  15. Pinch off pieces of dough and form into donut shapes.
  16. Arrange on a large plate and microwave 2-3 minutes until fully cooked.
  17. Set aside to let cool.
  18. Pour baking cocoa, water, and muscle egg into a small bowl to make the glaze.
  19. Mix well until mixture smooth.
  20. Dip tops of donuts in glaze and top with desired toppings.
  21. Enjoy!

  1. 5 minute pizza pinwheels (can be made gluten free)
  2. Makes 5-6 pinwheels Ingredients
  3. Crust
  4. 3/4 cup whole wheat flour
  5. 1/2 cup pumpkin puree (or baked sweet potato)
  6. 1 tsp baking powder
  7. pinch each of smoked black pepper and garlic powder
  8. 1 tbsp olive oil
  9. Toppings
  10. 1/4 cup shredded cheese of choice
  11. 1/3 cup mixed bell peppers
  12. Extra toppings, as desired Dipping sauce
  13. 1/2 cup marinara sauce
  14. Combine first 5 ingredients and mix well until a Dough forms.
  15. Sprinkle some flour on the counter and press out the dough into a rectangular shape as big and as long as you can get it without the dough stretching too thin.
  16. Top the dough with peppers, cheese, and any other desired toppings. Be sure to leave a little room at the edges so the fillings don't seep out. Starting at one edge of the rectangle, roll up the dough, making sure to push the fillings in as you roll (similar to a cinnamon roll).
  17. Cut off pieces of the rolled up dough and Arrange on a large plate and microwave 2-3 minutes until pinwheels are fully cooked. Dip in marinara and enjoy!

  1. 1 scoop protein
  2. 1/4 cup wheat flour
  3. 1 tsp vanilla extract
  4. 1 tsp stevia leaf drops
  5. 1/2 cup white chocolate Justin's almond butter
  6. 1 tsp cinnamon
  7. 1/4 cup white chocolate chips
  8. Mix all ingredients together except white chocolate chips.
  9. You may need to add a little bit (add in very small amounts!) of water as needed as you work the dough because it can be dry.
  10. Last add the white chocolate chips and work them in the dough.
  11. Then pull out pieces of the dough to make small balls, place on a cookie sheet and stick in the fridge for at least an hour.
  12. Makes 8 balls.

Instructions
  1. PB&J inspired puffle (can be made vegan) Makes 1 large serving
  2. Waffle- 1/2 cup pumpkin purée (or baked sweet potato or for a fluffier end product, add 1 egg and reduce pumpkin to 1/4 cup) - 3/4 cup whole wheat flour - 1 tsp baking powder - 1 tsp vanilla - 1 tbsp olive oil - 1 tsp sweetener of choice
  3. Filling - couple squares/tbsp chocolate of choice - 2-3 tbsp peanut butter of choice, melted - 1/3 cup strawberries
  4. Combine all ingredients and mix well by hand until a dough forms. Heat up your waffle maker.
  5. Measure your waffle maker then flatten dough into a circular shape that will fit into the waffle maker. Spoon ~2 tbsp peanut butter on one side of the dough and place chocolate pieces on top.
  6. Fold the other half of the dough on top of the fillings and pinch edges together. Place in waffle maker and cook for a few minutes. Pick up the puffle and gently press the seams onto the waffle maker so they cook as well.
  7. Place puffle on a plate and microwave for ~1 minute to ensure dough is completely cooked. Cut in half and layer with strawberries and remaining peanut butter. Enjoy!

  1. Vegan snickerdoodle ice cream infused pancakes - makes 4 pancakes
  2. 1/2 cup oat flour
  3. 1/2 cup whole wheat flour
  4. 1/2 cup melted snickerdoodle ice cream
  5. 1 tsp vanilla
  6. 1 tsp baking powder
  7. 1 flax egg (1 tbsp flax + 3 tbsp water)
  8. almond milk (1/4-1/3 cup)
  9. In a small bowl combine flax and water and let sit for a few minutes until gelled.
  10. Combine the rest of the ingredients and add in the almond milk slowly.
  11. Batter will be very thick and slightly sticky.
  12. Portion out batter using 1/4 cup and cook a few minutes on each side.
  13. I also covered mine with a lid to help them cook all the way through.

  1. 5 min twisted pizza breadsticks - makes 3-4
  2. Breadsticks, 1/2 cup pumpkin purée

  15. Repeat with rest of dough.
  16. Microwave for 2-3 minutes until fully cooked.
  17. Set aside To cool.
  18. Microwave the quest bar for 10 seconds or until soft.
  19. Pull of pieces of the bar and press onto the tops of the donuts.
  20. Top with other desired toppings and enjoy.
