I love pancakes but they aren’t always the easiest thing to take on the road with me to class. Muffins though, I can do that. Today I pretty much took a rest day of doing nothing, considering I was pooped from my weekend away. I’m all about that meal prep so in preparation for tomorrow French class I hit the kitchen and made these!

Instructions
  1. Mix the dry ingredients together.
  2. Slowly add in the egg, pumpkin and cauliflower.
  3. Add in water a tbsp at a time until you get a pancake like batter.
  4. Make sure it's not too runny or you will need to add more pancake mix!
  5. Bake for 20 mins at 190 !
  6. Top with greek yogurt and sprinkle with cinnamon

Instructions
  1. Preheat oven to 350.
  2. Mix dry ingredients then add in pumpkin puree!
  3. Finally add in water or milk slowly making sure not to create a batter that too liquid or it wont cook!
  4. Trust me its not pretty!
  5. Pour evenly into silicone molds.
  6. Bake for 20-25 mins. Take out and top with a mixture of 1/4 cup Greek yogurt and 1/2 tbsp coconut flour!
  7. Oh and sprinkles of course 🙂

  1. 5 minute pizza pinwheels (can be made gluten free)
  2. Makes 5-6 pinwheels Ingredients
  3. Crust
  4. 3/4 cup whole wheat flour
  5. 1/2 cup pumpkin puree (or baked sweet potato)
  6. 1 tsp baking powder
  7. pinch each of smoked black pepper and garlic powder
  8. 1 tbsp olive oil
  9. Toppings
  10. 1/4 cup shredded cheese of choice
  11. 1/3 cup mixed bell peppers
  12. Extra toppings, as desired Dipping sauce
  13. 1/2 cup marinara sauce
  14. Combine first 5 ingredients and mix well until a Dough forms.
  15. Sprinkle some flour on the counter and press out the dough into a rectangular shape as big and as long as you can get it without the dough stretching too thin.
  16. Top the dough with peppers, cheese, and any other desired toppings. Be sure to leave a little room at the edges so the fillings don't seep out. Starting at one edge of the rectangle, roll up the dough, making sure to push the fillings in as you roll (similar to a cinnamon roll).
  17. Cut off pieces of the rolled up dough and Arrange on a large plate and microwave 2-3 minutes until pinwheels are fully cooked. Dip in marinara and enjoy!
Recipe Notes

For a gluten free option, can sub oat flour and 1 tbsp coconut flour.

I recently discovered the awesomeness that is a puffle (a pastry filled with whatever you desire then cooked in a waffle maker). so here is my version made with my vegan 5 minute dough then filled with peanut butter and chocolate and layered with strawberries after cooking. delicious.

Instructions
  1. PB&J inspired puffle (can be made vegan) Makes 1 large serving
  2. Waffle- 1/2 cup pumpkin purée (or baked sweet potato or for a fluffier end product, add 1 egg and reduce pumpkin to 1/4 cup) - 3/4 cup whole wheat flour - 1 tsp baking powder - 1 tsp vanilla - 1 tbsp olive oil - 1 tsp sweetener of choice
  3. Filling - couple squares/tbsp chocolate of choice - 2-3 tbsp peanut butter of choice, melted - 1/3 cup strawberries
  4. Combine all ingredients and mix well by hand until a dough forms. Heat up your waffle maker.
  5. Measure your waffle maker then flatten dough into a circular shape that will fit into the waffle maker. Spoon ~2 tbsp peanut butter on one side of the dough and place chocolate pieces on top.
  6. Fold the other half of the dough on top of the fillings and pinch edges together. Place in waffle maker and cook for a few minutes. Pick up the puffle and gently press the seams onto the waffle maker so they cook as well.
  7. Place puffle on a plate and microwave for ~1 minute to ensure dough is completely cooked. Cut in half and layer with strawberries and remaining peanut butter. Enjoy!

  1. Quest cookies and cream donuts - makes 4-5
  2. 3/4 cup whole wheat flour (for gf version: sub oat flour plus 1-2 tbsp coconut flour)
  3. 1/2 cup pumpkin purée (or can sub in 1 egg and reduce pumpkin to 1/4 cup)
  4. 1 tsp vanilla
  5. 1 tsp baking powder
  6. 1 tbsp olive oil
  7. 1 tsp sweetener of choice
  8. 1 quest cookies and cream bar

  11. If you go the route of using egg the dough may be a little sticky.
  12. Make sure to flour your hands and/or wet your hands to help manage the dough.
  13. Pull off pieces of dough and roll into a thin rope.
  14. Form into donut shape.
  15. Repeat with rest of dough.
  16. Microwave for 2-3 minutes until fully cooked.
  17. Set aside To cool.
  18. Microwave the quest bar for 10 seconds or until soft.
  19. Pull of pieces of the bar and press onto the tops of the donuts.
  20. Top with other desired toppings and enjoy.
  21. Best if eaten immediately.

  13. Pull of a piece of dough and form into a long rope.
  14. Form into a donut shape.
  15. Repeat with the rest of the dough.

  17. Set aside to let cool. Process almonds in a food processor for about a minute. Mix almonds with coconut, protein powder, and date caramel.

Instructions
  1. Pumpkin and butternut squash gnocchi
  2. 12 oz frozen butternut squash
  3. 1/2 cup pumpkin purée
  4. smoked black pepper
  5. nutmeg
  6. 2 1/2 cups whole wheat flour (add more as needed)
  7. Microwave butternut squash according to the directions then mash with pumpkin purée.
  8. Mix until you have a smooth purée.
  9. Add a sprinkle of blacked pepper and nutmeg and mix into purée.
  10. Due to its high moisture content, use a paper towel and press into purée to remove some of the moisture.
  11. Slowly mix in flour and knead with your hands until a dough forms.
  12. Meanwhile, get out a large pot and start to boil some water.
  13. Pull of a small piece of dough an roll into a thin rope (about 1/2in around).
  14. Use a sharp knife to cut little pieces off of the rope.
  15. Take one piece in your hand, press your thumb into the center of the bottom and at the same time use a fork to indent the top.
  16. Repeat with the rest of the pieces.
  17. Continue to do this with the rest of te dough.
  18. Once finished, drop a couple handfuls into the boiling water and cook until they float to the top.
  19. Pair with a brown butter and sage sauce or even a tomato sauce, as I did (I used a florentine spinach and cheese sauce).

  2. 2 eggs

  8. 2 tbsp baking cocoa
  9. splash almond milk
  10. Combine all ingredients and mix well.
  11. Microwave 3-4 minutes until fully cooked.
  12. Turn out onto a plate and microwave another minute If not fully cooked on bottom.

  14. To make nicecream, simply blend 1-2 frozen bananas in a food processor until smooth and creamy.

  1. Dark chocolate mint French toast donuts - makes 3-4
  2. 1/2 cup pumpkin (or baked sweet potato)
  3. 3/4 cup whole wheat flour (gf option: sub 3/4 cup oat flour + 1-2 tbsp coconut flour)
  4. 1 tsp baking powder
  5. 1 tsp vanilla
  6. 1 tbsp olive oil
  7. 1 tsp apple cider vinegar
  8. 1 egg
  9. 1 tbsp chocolate coconut butter
  10. 1 quest mint chocolate chunk protein bar
Recipe Notes

Combine all ingredients except last 3 and mix well! Make sure to use your hands to incorporate all ingredients into a dough. Pinch off pieces of dough, roll out into a thin rope, and form into a donut. Or form into small balls Of dough and form a hole in the middle with your finger. Repeat with rest of dough. Microwave 2-3 minutes until fully cooked. Set aside. In a Small bowl whisk egg with coconut butter. Dunk donuts in mixture and place on a warmed up skillet. Cook a few minutes on each side until fully cooked. Remove from heat. Microwave quest bar for 10 seconds until soft. Pull of pieces of the bar and arrange on top of each donut. Enjoy!
