This is one of my most favorite dinner recipes. My dad always requests I make this every time I visit. And it’s received positive reviews from everyone that has made it. The sweetness of the maple syrup combines beautifully with the peanut butter and soy sauce and the spices add just the right touch of flavoring. Definitely a must try!

Instructions
  1. Thai peanut whole grean pasta
  2. 7.5 ounce whole grain spaghetti (about half the box)
  3. 1/4 cup olive or canola oil
  4. diced garlic to taste (I used a large spoonful of diced garlic)
  5. 1/2 cup green onions, diced
  6. 1/2 cup white and red onions, diced
  7. 1/2 cup red and green bell peppers, diced
  8. 2 cups frozen vegetables (I used carrots, broccoli, and cauliflower)
  9. Splash of red wine vinegar (seriously, just a splash or two)
  10. 1/4 cup pure honey or pure maple sypup
  11. 1/2 cup natural peanut butter
  12. 1/2 tbsp ginger
  13. 1/2 tbsp chili powder
  14. make your pasta according to the directions on the pasta. set aside once finished.
  15. In a separate sauce pan (make sure it’s fairly large), combine your onions (green, red, white) and garlic with olive oil and saute until your onions start to turn translucent. add your ginger and chili powder and mix well.
  16. add in your frozen vegetables and peppers and cook until your frozen vegetables begin to soften (~5 minutes or so).
  17. Add the red wine vinegar, honey/maple syrup, and peanut butter. Mix well and simmer for about 2-3 minutes. Add in your pasta and mix well. Serve and enjoy 🙂

Instructions
  1. Put chicken in a pan over high heat with chicken broth and add all ingredients except corn starch.
  2. Once chicken is done cooking, add a small amount of cold water to corn starch and add to pan (removed from heat).
  3. Put back over heat and add vegetables, adding chicken broth as necessary. (Also, add any vegetables you'd like!)

Instructions
  1. Cut off the ends of the eggplant; then cut it into 3/4 inch thick slices
  2. Put the eggplant pieces on a double layer of paper towels and sprinkle both sides generously with salt.
  3. Let the eggplant sit with the salt on it for about 30 minutes to draw out the liquid.
  4. Preheat the oven to 375F/190C
  5. Make the sauce by heating 2 teaspoons olive oil and sauteing the chopped garlic just until it becomes fragrant not brown.
  6. Add the diced tomatoes, dried Italian seasoning, and dried oregano
  7. Simmer sauce on low until it’s thickened
  8. After 30 minutes, wipe the eggplant dry with paper towels
  9. Spray a roasting sheet with non-stick spray, lay eggplant slices on, brush the tops of the eggplant with the olive oil, and sprinkle with dried Italian seasoning.
  10. Roast the eggplant about 25 minutes in the oven once preheated
  11. While the eggplant roasts, slice the fresh basil leaves, plum tomatoes and combine the grated Parmesan and shredded mozzarella.
  12. After 25 minutes remove eggplant from the oven and turn oven setting to broil.
  13. Spread a few tablespoons of sauce on the top of each eggplant slice, sprinkle with basil, fresh tomatoes and top with a generous amount of cheese.
  14. Put pizzas under the broiler for 6 minutes until the cheese is melted and slightly browned.
  15. Enjoy right out of the oven

Instructions
  1. Bake the french fries following the instructions of the bag.
  2. Cook the crab following package directions. Crack the shells and get the meat out and put it in a bowl.
  3. For the garlic butter put everything in a micro safe bowl and microwave until the butter melts, about 30 seconds. Set aside until the fries are ready to come out of the oven.
  4. Mix together the garlic aioli(4 tablespoons mayonnaise 4 tablespoons sour cream 1 minced garlic clove salt and pepper (freshly cracked)).
Set aside until ready to use.
  1. To assemble, when the fries come out of the oven put them in a bowl. Pour the garlic butter over them. Give them a couple of tosses in the bowl. Put the fries in a serving dish. Sprinkle with a little sea salt.
  2. Top with the crab, spreading it out across the top. Put a few garlic aioli drizzles over the top and serve the remaining aioli on the side.

  1. Combine the crushed garlic, salt, oregano, apple cider vinegar, and lemon juice in a small bowl.
  2. Pat the pork shoulder dry with paper towels. Lay out several pieces of plastic wrap, overlapping (big enough to wrap the whole pork shoulder after the seasoning is rubbed on), and place the pork shoulder on top.
  3. Rub the seasoning over the entire surface of the pork shoulder. Wrap tightly in the plastic wrap. Place in a dish or on a tray and refrigerate overnight.
  4. Remove the pork shoulder from the refrigerator and let warm to room temperature for 1 hour before placing in the oven. Preheat the oven to 275°F.
  5. Remove the plastic wrap and place the pork on a roasting pan. Roast for 6 hours, until the meat is fork-tender.
  6. Then wrap in a lettuce wrap and top with sliced peaches.

  1. Preheat oven to 350 degrees.
  2. Place slices of eggplant on a cooking sheet sprayed with cooking spray.
  3. Drizzle a little olive oil over each slice.
  4. Bake for 30 minutes, let cool.
  5. In a food processor, combine all ingredients excluding ground turkey.
  6. Blend until well combined.
  7. Place ground turkey in a large bowl and add baba ganoush.
  8. Mix together until well combined and form into patties.
  9. Bake for 35 minutes, or until burgers are done.

  1. Preheat oven to 375 F. Spray a 6 cup muffin tin with cooking spray.
  2. Nuke butternut squash in the microwave for 2 minutes. Add to a large sauce pan with the garlic, chicken broth, and milk. Bring to a boil then simmer for about 10 minutes. Add salt and pepper to taste.
  3. Add the cooked pasta to the sauce and toss to coat. Evenly distribute the pasta mixture to the muffin cups. Top with about 1/2 teaspoon panko bread crumb and then bake for about 18-20 minutes. Turn the oven to broil and cook for about 2-3 minutes or until slightly browned. Garnish with chopped parsley.

  1. 1 head cauliflower
  2. 1 cup sliced baby Bella mushrooms
  3. 1/2 white onion fixed
  4. 1 clove garlic minced
  5. 1/4 cup white wine
  6. 1/2 tsp red pepper flakes
  7. 1/4 cup chopped cilantro
  8. juice of 1 fresh lime
  9. 1/4 cup almond mozzarella cheese (optional)
  10. salt and pepper as desired
Cilantro Lime Cauliflower Rice
  1. Grate cauliflower into "rice" and set aside.
  2. Saute diced onion and garlic in a greased pan over medium heat for 2-4min.
  3. Add mushrooms and cook for another 2min.
  4. Add spices salt and pepper.
  5. Add wine and reduce until mushrooms are tender about 5-7min.
  6. Add cauliflower rice and cook for 3-5min.
  7. Add almond cheese, lime juice and cilantro and serve! Enjoy!
