Instructions
  1. Fully Raw Raspberry ice cream
  2. 45 g cashew nuts (activated)
  3. 1- 2 seedless date
  4. 45 g raspberries
  5. 70 grams young coconut meat
  6. 1 tsp lemon zest (peel of lemon)
  7. Keep all the ingredients in the freezer during the night except the dates and lemon zest.
  8. Put all the ingredients in a food processor and blend it for few minutes.
  9. The texture will be between cream cheese and ice cream.
  10. The flavor is like a raspberry cheesecake but a healthy version.
  11. To activate the cashew nuts keep them in water over night.
  12. Then they will become soft and when you blend it they will get a creamy texture (I don't have time to do this all the time so after I clean them and dry, then I keep them in the freezer).
  13. If the dates that u use are hard keep them in hot water for 15 min. to be soft.

Instructions
  1. Preheat oven to 350.
  2. Yes, I bake my pancakes , you can fry them but this is how I prefer them! Softer instead of fried.
  3. Shred zucchini.
  4. Mix together with rest of ingredients except water/milk.
  5. Slowly add in liquid tbsp by tbsp until you get a muffin like batter.
  6. Do not over mix.
  7. Add in raspberries last and place in oven for 25 mins.
  8. Remove and top with greek yogurt and warmed raspberries.

Instructions
Peach Protein Cupcakes:
  1. 2 scoops quest vanilla protein powder
  2. 1/2 cup coconut flour
  3. 1/4 cup buckwheat flour
  4. 1/4 cup almond flour
  5. 1 cup egg whites
  6. 1 cup chopped peaches
  7. 2 tbsp agave nectar
  8. 1 tbsp lemon zest
  9. 1/4 tsp sea salt
  10. 1/2 tsp baking powder
  11. 1/2 tsp baking soda
  12. 1 tap vanilla extract
  13. Blend all ingredients and bake for 23 min at 350 degrees
Raspberry Frosting:
  1. 1 cup raspberries
  2. 1 tbsp lemon zest
  3. 2 tbsp lemon juice
  4. 1 cup non fat plain Greek yogurt
  5. 1 scoop quest vanilla protein powder
  6. Blend all ingredients and pipe until cooked cupcakes! Enjoy!

  1. 1 container Dannon Light n fit Greek yogurt
  2. 1/2 cup Quest vanilla milkshake protein powder
  3. 2 tbsp coconut flour
  4. 1 egg
  5. 2 egg whites
  6. 1/4 cup unsweetened cashew milk
  7. 1 tsp vanilla extract
  8. 1/2 tsp baking powder
  9. 1/2 tsp baking soda
  10. 1 cup raspberries
  11. 1/2 cup enjoy life chocolate chips
  12. Mix all ingredients and then gently fold in raspberries and chocolate chips. Cook pancakes on medium heat for 3-5 minutes per side and serve with a drizzle of extra chocolate if desired!
