Peanut Butter and Chocolate Cheesecake
This peanut butter cheesecake has received rave reviews from all that have tried it. Instead of a traditional crust, this cheesecake sits upon a chocolate cheesecake "crust" and is then topped with a peanut butter and chocolate drizzle.

Mint Chocolate Chip French Toast Pancakes

This stack of goodness combines my two favorite loves; pancakes and french toast. why choose when you can have both? These are pancakes that are dunked in egg whites then cooked up like french toast. Quite possibly the best breakfast i’ve ever had! note: nutrition information is not correct as abs protein pancake mix was not an option when uploading the ingredients!

Pumpkin Pan-Cakes

Pumpkin Pan-Cakes

I love pancakes but they aren’t always the easiest thing to take on the road with me to class. Muffins though, I can do that. Today I pretty much took a rest day of doing nothing, considering I was pooped from my weekend away. I’m all about that meal prep so in preparation for tomorrow French class I hit the kitchen and made these!

Buffalo Chicken Dip Salad

Buffalo Chicken Dip Salad

I’m a huge fan of buffalo chicken dip, but between the cream cheese, ranch dressing, cheese and dipping chips- the fat content quickly soars through the roof. I have managed to make this recipe low fat, low carb, but not at ALL low in flavor!

Instructions
  1. Laughing Cow cheese wedges sub for the cream cheese, ranch seasoning + milk subs the dressing, and serving it over slaw gives you all the buffalo dip flavor & still the "crunch" of eating with chips.
  2. If you don't want eat as a salad, slice up your favorite high fiber tortilla, bakes a couple minutes and voila- instant chips.
  3. Here's what you need:
  4. 1 large chicken breast (I used 5oz/140g)
  5. 2 wedges Laughing Cow Queso Fresco
  6. 1T Franks Red Hot
  7. 1.5 tsp Ranch seasoning
  8. 2T milk
  9. Cook chicken with garlic & onion powder- I choose to broil because it makes it SO flavorful. Boiling/baking will work too. Then shred the chicken.
  10. While chicken is cooking- combine the remaining ingredients into a sauce. Add shredded chicken, stir to coat.
  11. Serve over favorite shredded lettuce/spinach. I served mine here with broccoli slaw, as I found serving it over slaw gives you all the buffalo dip flavor & still the "crunch" of eating with chips.
  12. If you don't want eat as a salad, slice up your favorite high fiber tortilla, bake a couple minutes and voila- instant chips.
  13. Garnish with green onion.
