I must admit I’m getting a bit sick of sweet breakfasts. When i think of savory, there’s omelettes and of course toast with veggies but I still wanted a muffin that I’d be able to take with me to class. Probably one of my favorite muffins is a hearty morning glory filled with everything I love!

Ingredients
- 1 medium egg
- 6 nut walnuts
- 1/2 tbsp cinnamon
- 1/4 cup quartered or chopped Apples
- 1/4 cup chopped Carrots
- 1 tsp Ginger
- 1/4 cup chopped Zucchini
- 0.23 cup (8 fl oz) water
- 1 serving (serving = 1 tsp) Kroger Baking Powder
- 1 serving (serving = 1/3 cup) Kodiak Cakes Flapjack Mix
- 1 serving (serving = 1 packet) Truvia Sweetener
- 1/2 serving (serving = 1 scoop) About Time Whey Protein Isolate

Instructions
- Whip egg first until frothy.
- Add in shredded veggies of choice (make sure to get as much liquid out as possible ).
- Mix in dry ingredients and then Apple pieces.
- Slowly add in water making use not to add too much or your batter will be too runny.
- Top with walnuts.
- Bake for 20 mins at 190 degrees.
- Makes 10 mini muffins or you could use larger muffin tins for less!
