Instructions
  1. Put chicken in a pan over high heat with chicken broth and add all ingredients except corn starch.
  2. Once chicken is done cooking, add a small amount of cold water to corn starch and add to pan (removed from heat).
  3. Put back over heat and add vegetables, adding chicken broth as necessary. (Also, add any vegetables you'd like!)

Instructions
  1. Cauliflower tamales!
  2. 2 bags of Green Giant Cauliflower Crumbles
  3. 4 eggs
  4. 1 tsp adobo seasoning
  5. 2 packets true lime / or lime juice from 2 lime wedges
  6. 10-12 oz meat of choice
  7. Pickled jalapeños (optional)
  8. 1/2 cup world market salsa verde
  9. 9 corn husks
Recipe Notes

Soak corn husks in hot water for 2 hours before starting. Pure cauliflower crumbs until they reach a rice consistency. Place in cheese cloth and squeeze out excess water. Mix with seasonings and eggs. Lay out corn husks and apply thin layer of mass mixture even on husk. Measure 1-1.5 oz of protein of choice and put in center of husk. I added 3 jalape±os on top as well as a 1/2 tbsp of salsa verde on the protein. Fold husk together to close the tamale. Steam for 25 minutes and done!

  1. Dampen edges of the egg roll wrap with egg whites and spray evenly with coconut oil spray or olive oil spray
  2. Place shredded or grilled chicken breast with avocado, cheese and buffalo sauce
  3. Cook in convectional oven at 400 degrees for 15-20 minutes or until wrap is golden brown
  4. OR toss in Air Fryer at 400 degrees for the same amount of time
