This peanut butter cheesecake has received rave reviews from all that have tried it. Instead of a traditional crust, this cheesecake sits upon a chocolate cheesecake "crust" and is then topped with a peanut butter and chocolate drizzle.

Instructions
  1. Peanut butter and chocolate cheesecake Makes ~10 slices
  2. Peanut butter cheesecake - 2 cups plain greek yogurt - 2 eggs - 1/2 cup natural peanut butter - 1/4 cup coconut sugar or brown sugar - 1/4 cup almond milk - 1/8 cup baking cocoa
  3. Drizzle - 1/3 cup natural peanut butter, melted - 1/4 cup baking cocoa - water, as needed - sweetener, to taste
  4. In a medium sized bowl, combine first 6 ingredients and mix well until smooth and creamy.
  5. Transfer 1/3rd of the mixture to a smaller bowl and add the baking cocoa. Mix well. Oil a medium sized glass dish and pour the chocolate mixture on the bottom. Pour the peanut butter mixture on top. Bake at 350 degrees f for ~40 min.
  6. Get out 2 small bowls to prepare the peanut butter and chocolate drizzle. In one bowl, add the peanut butter and microwave ~30 seconds or until melted. In the other bowl, combine the baking cocoa with a little water at a time until mixture is liquid in consistency and easy to drizzle. Drizzle peanut butter and chocolate mixture on top of cheesecake once cool. Let chill in refrigerator for a few hours or overnight before serving.
  7. Store leftovers in refrigerator in an airtight container.

  1. Chocolate fudge:
  2. ½ cup natural chocolate whey protein powder (45g)
  3. 4 teaspoons cocoa powder (8g)
  4. ¼ cup + 1 tablespoon filtered water (75ml) or more, as needed
  5. ¼ cup peanut butter (64g)
  6. teaspoon salt (0.6ml)
  7. Peanut butter filling:
  8. ¼ cup peanut butter (64g)
  9. teaspoon salt (0.6ml)
  10. Mix whey protein, cocoa powder, and water until smooth.
  11. Add ¼ cup peanut butter and â…› teaspoon salt, and mix well. If your fudge batter is too thick, add a little more water. (It should be thin enough to cover the peanut butter filling well.)
  12. Put a spoonful of chocolate fudge batter into each of 8 small silicone muffin cups.
  13. Mix the remaining peanut butter with teaspoon salt.
  14. Spoon ½ tablespoon into each cup. If the peanut butter is thick, first flatten it out in your hand and then place it on top of the chocolate.
  15. Top with another spoonful of chocolate fudge batter.
  16. Freeze for about 2 hours, or until firm.
  17. Enjoy! Store in the freezer.

  1. Mix all ingredients (except cinnamon) in bowl and stir with whisk.
  2. Pour on heated skillet over high heat.
  3. I use the square skillet.
  4. This is VERY VERY liquidy, so be careful when pouring.
  5. You want them thin. After the mixture looks solid enough to flip, take flipper/spatula and make a cross to make four square crepes.
  6. Flip over onto other side.
  7. While the above is cooking, you can make your fillings:
  8. In a cup, mix your PB2 and water together.
  9. I like the PB2 to be runny for this particular recipe, so you may need to add a little more water to make it runny.
  10. In another bowl, mix your protein powder and water with a hand mixer and set aside.
  11. While the crepes are on the skillet, you can pour the runny PB2 onto each square (save a little for drizzle at the end).
  12. Then pour the protein fluff over the PB2.
  13. Transfer crepes onto a plate, sprinkle with cinnamon for taste, roll into pretty little crepes, drizzle with remaining PB2 add another dash of cinnamon, and there ya have it!
  14. Voila!

Instructions
  1. Whip egg first until frothy.
  2. Add in shredded veggies of choice (make sure to get as much liquid out as possible ).
  3. Mix in dry ingredients and then Apple pieces.
  4. Slowly add in water making use not to add too much or your batter will be too runny.
  5. Top with walnuts.
  6. Bake for 20 mins at 190 degrees.
  7. Makes 10 mini muffins or you could use larger muffin tins for less!

  1. Vegan snickerdoodle ice cream infused pancakes - makes 4 pancakes
  2. 1/2 cup oat flour
  3. 1/2 cup whole wheat flour
  4. 1/2 cup melted snickerdoodle ice cream
  5. 1 tsp vanilla
  6. 1 tsp baking powder
  7. 1 flax egg (1 tbsp flax + 3 tbsp water)
  8. almond milk (1/4-1/3 cup)
  9. In a small bowl combine flax and water and let sit for a few minutes until gelled.
  10. Combine the rest of the ingredients and add in the almond milk slowly.
  11. Batter will be very thick and slightly sticky.
  12. Portion out batter using 1/4 cup and cook a few minutes on each side.
  13. I also covered mine with a lid to help them cook all the way through.

  1. 1 S'mores questbar
  2. 1-2 tbsp water
  3. 1 1/2 2 cups wheat puffs/rice puffs
  4. Microwave together for 10-15 secs and mix together until it becomes a light paste.
  5. It may need to be warmed longer depending on your microwave.
  6. Now add 1 1/2 cups wheat puffs and combine!
  7. Place mixture onto baking sheet and bake for 20 mins at 300!
