Full of flavour and protein!!
Banana Coffee Protein Pancakes
Mix 1/2t coffee powder with ~1/2t water in a small dish/ramekin (can omit this step)
In a separate bowl melt banana in the microwave for ~1 minute
Add 1T vanilla greek yogurt, 1T cottage cheese and mix well.
Add flours, protein powder, 1t instant coffee, egg whites, vanilla, baking powder and stevia and mix well.
Place into pancake shapes on a medium heat, lightly greased pan.
Add a few drops of the coffee mixture to each pancake, and flip when bubbles start to form.
Cook other side and enjoy!
