Protein crepes filled with lemon creme and topped with a fresh blueberry compote! YUM

Ingredients
- 0.68 cup Blueberries
- 1/4 serving (serving = 1 cup) Blue Diamond Almond Breeze Unsweetened Vanilla Milk
- 1 serving (serving = 1/2 cup) Quaker Quick Oats
- 2 serving (serving = 3 tbsp) All Whites 100% Liquid Egg Whites
- 1 serving (serving = 1 container) Dannon Oikos Traditional Greek Yogurt - Lemon Meringue

Instructions
- Blend oats into flour-like consistency
- Mix oats with egg whites and almond milk
- Pour 1/2 of batter into preheated pan while swirling pan to make sure it reaches edges. Let cook for about 30 seconds and flip. Do this with second half of batter as well.
- When crepes are finished fill with yogurt and plate. You can either fold them as shown in the picture, or roll them up!
- Top with blueberry compote by microwaving about 1/2 of blueberries for 30 seconds and then stirring in remaining blueberries when finished.
- Top with remaining yogurt (if there is any) and devour! I hope you enjoy 🙂
